蕃茄豆腐湯
Ingredients:
- A can of chicken broth
- A tomato diced
- Tofu, half of the package, diced
- An egg, beaten
Cooking:
- Pour the broth, add water to the volume you want. Bring it to a boil.
- Add tomato and tofu, add ½ teaspoon salt, a little bit sugar. Bring it to a boil. You are done.
- Remember, chicken broth is salty already. Don’t add too much seasoning.
- You can add the egg slowly to the boiling soup to make it more yummy and nutritious.
炒牛肉
Ingredients:
- Steak beef, or any tender lean beef, you have to test it several times to know which part of beef you like most. Slice it and put it in a large bowl and add 1 tablespoon soy sauce, 1 teaspoons of salt, 1 tablespoon cooking wine, 1 teaspoons of sugar, one teaspoon of sesame oil (if you have) and 1 tablespoon corn starch. Mix it well and wait for 15 minutes for the flavor to sink in.
- Slice ginger, garlic, slice 2-3 green onions, slice some hot peppers if you like. To prepare hot peppers, you wash it, cut the top off, cut open it like you do to bell pepper. The seeds are spicy. I usually take the seeds out and use 3 or 4 hot peppers’ skins to make the beef hot. Be careful. It irritates your fingers when you rid the seeds. I usually wear the disposable plastic gloves. A joke goes around about going to the toilet after you peel the seeds, and you feel uncomfortable when you pee. Haha.
Cooking:
- TPWE, pour in more oil than usual. When the heat is 70% hot(所謂的陰陽火), put in the beef. Stir fry it until it almost turn color, take it out.
- TPWE, put in some oil. Put in the garlic, ginger, and then hot peppers, put the beef AND the green onions in when all the spices’ fragrance come out. Remember to turn the heat to medium for the beef. Turn the beef until it’s cooked. It won’t take you too long because it’s half way done before you put it in the pot.
- Before you take it out, turn the heat to high, and pour 2 tablespoons of cooking wine and mix and take it out right a way. Don’t need to cook the wine away or overcook the beef. Just mix it for 5 seconds and take it out.
- When cook beef, especially 快炒, never never add water.

½ of the tofu was sent back to the refrigerator. I forgot to tell you that you need to change the water and put the ½ tofu to refrig. for later. It will be fresh for 2 or 3 days. Change water if you can. After one week, don’t use that tofu. It might turn foul.
